The gameplay in Need for Speed: Most Wanted is simple in its concept where then player races a car of their choosing to either beat their own time, or another racer. Being pulled over by a police car returns in Need for Speed: Most Wanted and it serves as an obstacle to challenge the player even further.
Players can move up to cars that are capable of higher speeds in Need for Speed: Most Wanted. A new feature that makes faster cars even more efficient are the oxide meters that refill automatically. Speed boosts that are powered by nitrous oxide have been a thing since Need for Speed Underground, but now they refill themselves. Now the races can become more intense as cars are moving faster and faster.
Need for Speed: Most Wanted takes place in the city of Rockport, and more specifically three regions found in Rockport. The times of the races fall between the times the sun rise and set. This is different from the night races in Need for Speed Underground.
This game contains three game modes; one of them being Quick Race. In the game mode Quick Race the player simply picks out a car and a race track and begins their race. There's also Career Mode which is a little more involved with the storyline than Quick Race mode. It takes the player through the storyline and as they progress more cars and race locations become accessible.
Making progress in Career Mode involves winning races, achieving a set number of certain actions, and achieving a minimum bounty during a police chase. If enough progress is made the player will have a chance to race against one of the Blacklist racers.
The third game mode in Need for Speed: Most Wanted are the Challenge Series. This game mode consist of a total of 69 challenges and they get more difficult the farther you go down the line. Some of the challenges include races and pursuit missions. An example would have something to do with tagging a number of cop cars. All of the cars in the Challenge Series are predetermined. They vary from cars offered in the career mode to basic cars found in everyday traffic, even dump trucks are used for one challenge.
Aside from the broader game modes in Need for Speed: Most Wanted, there are also specific race modes. The four race modes included in Need for Speed: Most Wanted are found in the previous game Need for Speed Underground. They are circuit races, point to point sprint races, lap knockout races, and drag races. The overall set up of the race modes remain the same from previous games.
